So what am I so excited about? My successful attempt at red velvet cake....finally!!!!!!!!
I like red velvet cake (as expressed in one of my previous postings) and have tried on numerous occasions to make it. Unfortunately my attempts were met with disappointment. Whether it was the cake that didn't rise, the color that wasn't right or the texture that was too dense...there was always a problem. However about two weeks I finally made a cake that was worthy of the name Red Velvet.
In my normal fashion I did a search online for cakes and saw many pretty images, but the recipes attached to them failed to wow me. However, eventually I found something and gave it a try. From the moment that the food coloring was added to the batter, I became optimistic. Something inside of me just knew that this one was going to be a winner. When the cake was done, I instantly impressed before even tasting it. The red color was.....well, red. In the past it was anywhere from reddish brown to dark burgundy. The secret I learned was to use liquid food coloring, not a gel and not a paste as I've done in the past. The cake baked evenly and raised rather nicely. Overall I was very impress if I must say. Once the cake cooled I topped it off with a cream cheese frosting that I also found online. It was a bit runny, and not really good for decorating so I just did the best I could do.
I took half of it into work to share with my coworkers and overall the feedback was good. The only thing I heard from 2 people was it wasn't moist enough for them. I used the exact amount called for in the recipe and thought the cake was extremely good, but I agree perhaps a bit more fat will be better in the future.
So, after about 2 years and 5-7 attempts I finally conquered little red velvet.

Gurl!!! the cake looks so moist and good! nobody can make a red velvet cake like Dollie (my mama)... hmmmmm good!
